Flor de Sal (Portugal)

The ‘caviar of salt’ is harvested by hand in the Algarve. 

The salt crystalises into a fine layer, which looks like a flower, on top of the salt pans. The delicious crystals can only form on hot sunny days, when there is no wind. It is only the first harvest of the pans that is the true, premium quality ‘Flor de Sal’.

Delicate, with a delicious aroma, Flor de Sal is prized for its light crunchy but delicate texture and slightly sweet flavour from the trace elements.

Use Flor de Sal to finish dishes such as  asparagus, oysters and octopus.

Or keep a small bowl on the table for sprinkling during dinner.
