JUST IN - Petalos salt from Spain

For the salt aficionados out there, we have just acquired a new salt from the south of Spain.


These beautiful salt flakes are created by means of artisanal extraction from subterranean rivers, whereby the salt is deposited in saline ponds and dried by the Mediterranean sun and the Alicante wind, removing the water through evaporation and conserving all of the minerals in the salt that had been dissolved by the water.


Originated by the strong evaporation which took place in marine basins that were once occupied by the sea and then isolated during the Triassic period, Villena salt is prized for its high magnesium content, which gives it a soft palate.


This soft, white salt can be used as a finishing salt on salads, fish, garlic shrimp, watermelon and sandwiches.
